The Comté industry today consists of: • more than 3,000 dairy farms • More than 170 cheese dairies known as fruitières • 20 maturing houses
This working environment is linked not only by history and culture, but also by a common economic destiny. With a production at more than 50,000 ton, Comté makes a very significant contribution to the Jura Massif’s healthy economy.
The vital tasks of promotion, defending the industry’s interests, organizing events, research etc. are carried out by the CIGC (Comité Interprofessionnel du Gruyère de Comté, based in Poligny). This collective both serves as the industry’s mouthpiece and as a link between its partners and its economics, administration, policies and research.
